Chunky Monkey Mug Cake
I am beyond thrilled to be sharing one of my favorite recipes AND one of my favorite brands with ya today.
Every day this week I was totally HANGRY when I got home from school (like that’s new), and my snack needs were very specific. I wanted something that:
- Was warm and cozy
- Would keep me full until dinner
- I could prepare in less than 5 minutes
It took me a while, but I finally came up with a recipe that checked all the boxes. Even better, this mug cake features my very favorite chocolate: Eating Evolved.
When I was first transitioning to a more plant-based lifestyle, I thought going fully vegan would mean I had to give up chocolate. For good. That right there would have been a deal breaker. Luckily, I discovered Eating Evolved, a company dedicated to creating vegan, fair trade, paleo, refined sugar free chocolate. - ½ banana
- 2 tbsp. instant oats
- 3 tbsp. milk/almond milk
- ⅛ tsp. baking powder
- ½ tbsp. chopped walnuts
- 1 oz. Eating Evolved chocolate
- Mash banana in small bowl or ramekin.
- Add oats, almond milk, and baking soda and stir.
- Microwave for 30 seconds.
- Top with walnuts and chocolate, then microwave for another 30 seconds.
