Chunky Monkey Mug Cake

Chunky Monkey Mug Cake

I am beyond thrilled to be sharing one of my favorite recipes AND one of my favorite brands with ya today.

Every day this week I was totally HANGRY when I got home from school (like that’s new), and my snack needs were very specific. I wanted something that:

  1. Was warm and cozy
  2. Would keep me full until dinner
  3. I could prepare in less than 5 minutes

It took me a while, but I finally came up with a recipe that checked all the boxes. Even better, this mug cake features my very favorite chocolate: Eating Evolved.

When I was first transitioning to a more plant-based lifestyle, I thought going fully vegan would mean I had to give up chocolate. For good. That right there would have been a deal breaker. Luckily, I discovered Eating Evolved, a company dedicated to creating vegan, fair trade, paleo, refined sugar free chocolate. I was absolutely thrilled to find a company that made my favorite sweet treat accessible to everyone, regardless of their food needs.

The company’s motto “It’s food, not candy,” is exactly how I feel about chocolate. If prepared correctly, there are so many health benefits to chocolate, but most companies dilute the goodness with tons of milk and sugar. Eating Evolved, on the other hand, uses simple, natural, recognizable ingredients that allow the health benefits and amazing flavor of the chocolate shine through.

All the Eating Evolved products I’ve tried so far are incredible, but I’m especially enamored with the Almond Sea Salt Chocolate bar. It adds the perfect salty-crunchy element to this sweet, gooey mug cake.

Order your chocolate here, then make this mug cake as soon as the goods arrive!
