Grain Free Chickpea Blondies

I’ve been craving chickpea brownies for weeks (after seeing some on IG, obviously), and over the weekend I finally made these incredible Grain free Chickpea Blondies. In the past, I would have craved a real blondie, but tried to convince myself I wanted a chickpea “blondie” instead. Now that I eat real brownies/cookies/ice cream whenever I crave them, I’ve found that I also crave the alternative options sometimes. So these bars are in no way a substitute for delicious sugary, buttery, gluteny blondies (which I totally eat), but they’re absolutely delicious in their own right.

These bars are incredibly easy to make (you just throw the ingredients in a food processor then bake) and they are a sweet, hearty, fudgy snack/dessert. PLUS, they have the added benefit of keeping me full longer than an ordinary brownie, so I’ve been bringing a couple to school to snack on during class.

So if you’re craving these as much as I am, you’ll just need

Chickpeas

Maple syrup

Nut butter (I used 1/2 almond butter, 1/2 walnut butter)

Coconut oil

And chocolate chips

Chickpea Bars

Ingredients
  • 1 15oz can chickpeas (drained and rinsed)
  • ¼ c. nut butter
  • ⅓ c. maple syrup
  • 1 tbsp coconut oil
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp vanilla
  • Handful of chocolate chips
Instructions
  1. Preheat oven to 35) ΒΊF and line a 9 x 5 pan with parchment paper.
  2. Add all ingredients to a blender, except chocolate chips, and pulse until smooth.
  3. Pour batter into pan, top with chocolate chips, and bake for 40-45 min.
